L’Oca d’Oro, an Italian restaurant in Austin, Texas, has introduced a unique dining experience. Guests can pay what they want for their meal, making fine dining more accessible. On a recent night, Zayed Al-Hamad and his family of four ordered various dishes without worrying about the cost. Al-Hamad noted that this offer allows them to enjoy a better dining experience at an affordable price.

Armand Daniels and Robin Wiley also took advantage of the promotion they discovered on Instagram. They appreciated having a more memorable outing after an unremarkable Valentine’s Day. The couple tried a spinach salad and decided to determine the bill’s amount at the end of their meal.

The pay-what-you-will concept began in December. Restaurant co-owners Adam Orman and Fiore Tedesco III launched it in response to rising food costs and labor shortages. Their goal was to make dining out accessible to more people. Orman emphasized the importance of traditional dining experiences, not just fast food or drive-thrus.

On these special nights, patrons still pay the full price for drinks. They can choose their price for food from the regular menu. A 20% service charge applies to help support fair wages and benefits for staff. Despite potential revenue loss, Tedesco prefers to challenge the norm of increasing prices.

A report by YouGov showed that more Americans are eating out less due to higher menu prices and budget concerns. Most diners tend to order takeout rather than dine in. Restaurants, however, play an integral role in providing social interaction and community engagement, according to Hanna Garth, a Princeton anthropology professor.

Orman and Tedesco hope the promotion addresses both financial and social barriers. Meanwhile, Erin Weber and Michelle Valencia viewed their evening at L’Oca d’Oro as a “girls night.” Having enjoyed the restaurant before, they split their bill, choosing to pay slightly less than the actual amount.

The promotion has resulted in a mixed financial impact. Guest payments varied, with some covering close to their usual costs and others paying less. Nevertheless, the restaurant has seen an increase in weekday traffic and considers expanding the concept.

As Al-Hamad’s party prepared to order, he reflected on the value of the dining opportunity. While in a tight financial position, he aims to contribute more responsibly as his situation improves. The pay-what-you-will offer provided a memorable meal and a sense of community support.
